Although this recipe isn’t technically made with pumpkin we thought you’d get a kick out of it anyway. This sounds gross but it’s a big hit with the kids on Halloween, and it’s much easier to make than it looks.

Ingredients
1-2 box cakes, any flavor
1-2 bundt pans
white canned icing
food coloring
black icing in tube
gummy worms,bugs,etc.
“googly eyes”
1 regular ice crean cone
fondant or fruit rollup (red for mouth)

If you like pumpkin pie, you’ll love this cake’s subtle spice flavors and velvety cream cheese frosting. The slightly sweet and mild pecans add a pleasant crunch to the smooth frosting. Pumpkin-pie spice is a combination of warm spices: cinnamon, ginger, nutmeg, allspice, cloves, and mace. Use it to enliven applesauce, vanilla ice cream, or tea.

Cake:
Cooking spray
2 Tbs. all-purpose flour
1 C. granulated sugar
1/2 C. packed brown sugar
1/4 C. canola oil
1/2 C. egg substitute
2 large eggs
1 15 oz. can unsweetened pumpkin
2 C. all-purpose flour (about 9 oz.)
1 tsp. baking powder
1 tsp. baking soda
2 tsp. pumpkin-pie spice
1/2 tsp. salt

This easy banana nut pumpkin cake is delicious. It is very moist. I had left over pumpkin pie filling. (easy Libby’s) and ran out of pie crust. I didn’t want to make any more crust or go the store for ready-made pie crust, so I combined banana bread mix with a can of pumpkin to make a delicious dessert. Great for the holidays!

1 box banana bread mix with walnuts
1/4-1/2 C. walnuts

I must say that I have made a few flavors of these and find them very very good. The pumpkin and the pineapple happen to be favorites of my family. Well, so is the chocolate chip.

Looking for something different for the holidays? This pumpkin cheesecake is absolutely phenomenal. It has a pumpkin cheesecake filling with a vanilla cheesecake top layer. The crust is made with gingersnaps which complement the spicy pumpkin filling perfectly. If you are not in love with gingersnaps, substitute vanilla wafers for the crumbs.

This is an easy dessert to throw together that’s always a hit.

Ingredients
1 pkg. spice cake mix
1 C. canned pumpkin
1/2 C. oil
1 pkg. instant vanilla pudding
3 eggs
1 tsp. cinnamon
1/2 C. water
1/2 C. chopped pecans
Directions
Combine all ingredients, except pecans. Blend well, then beat for 5 minutes. Fold in pecans. Bake in a greased and floured Bundt pan at 350 degrees for 45 minutes. Cool in pan for 15 minutes and turn out.

Ingredients
2 16 oz. pkg. pound cake mix
4 tsp. pumpkin pie spice
2 tsp. baking soda
2/3 C. water
1 3/4 C. solid pack pumpkin
4 eggs
Topping:
3/4 C. packed brown sugar
3/4 C. chopped nuts
1/2 C. flour
1/3 C. butter or margarine
Directions
Combine pound cakes mixes, spice and baking soda in large bowl. Add water, pumpkin and eggs; beat on medium speed for 3 minutes. Spread half of batter into greased 13×9-inch baking pan; sprinkle with have of topping below. Carefully spread remaining batter; sprinkle with remaining topping. Bake in preheated 325 degree oven of 50-55 minutes
until toothpick comes clean.
