Pure Pumpkin Cheesecake Recipe

Ingredients

* Crust:
* 1/2 C. pecan halves
* 1 C. gingersnap crumbs
* 1 Tbs. sugar
* 2 pinches salt
* 4 Tbs. (1/2 stick) unsalted butter, melted

* Filling:
* 1 C. pumpkin
* 1 C. turbinado sugar
* 2 C. heavy cream
* 1 lb. (2 8-oz. pkgs.) cream cheese
* 2 eggs
* 2 egg yolks

* Caramel:
* 1/2 C. sugar
* 1/2 Tbs. corn syrup
* 2 Tbs. water
* 1/4 C. heavy cream, heated
* 1 Tbs. butter
* 1/2 tsp. vanilla

Mini Pumpkin Muffin Mix in a Bag Recipe

Ingredients

* 1 1/2 C. all-purpose flour
* 2 tsp. baking powder
* 3/4 tsp. salt
* 1/2 C. sugar
* 1/2 tsp. cinnamon
* 1/2 tsp. nutmeg
* 1/2 C. raisins (optional)

Directions

Mix together these ingredients and place in zipper style bag.

Attach the following recipe:

“Mini Pumpkin Muffins”

Ingredients

1/4 C. shortening

1 egg, beaten

1/2 C. pumpkin

1/2 C. milk

Directions

Place mix in a bowl. Cut in shortening until fine. Add other ingredients. Mix until flour mixture is moistened. Fill greased or paper line mini muffin pans 2/3 full. Bake in 400° F oven for 15 - 20 minutes, or until done. Makes 1-3 dozen muffins depending on size.

Ginger Pumpkin Cheesecake Recipe

  • 8 oz. gingersnaps, finely crushed
  • 3 Tbs. butter or margarine, melted
  • Tbs. sugar 16 oz. cream cheese, softened
  • 3/4 C.  light brown sugar, firmly packed
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 15 oz. canned pumpkin
  • 1 Tbs. flour
  • 2 tsp. pumpkin pie spice
  • whipped cream
  • pecan halves

Pumpkin Spice Cake Recipe

This is a good diabetic recipe. Has a great taste and it’s easy to make!

Ingredients

Cake:
box spice cake
small can of pumpkin
1/2 C. water

Topping:
small box of sugar-free cheesecake pudding
1 C. milk
1 tub sugar-free Cool Whip

Directions

Preheat oven to 350 degrees. Bake in sprayed 9×13 dish for 20-25 minutes and let cool.

Spread topping on top of the cake when cool.

Pumpkin Crunch Cake Recipe

Ingredients

32 oz. pumpkin
3 eggs
1 C. milk
1 C. sugar
1 tsp. cinnamon
1/4 tsp. ginger
1/8 tsp. cloves
1 box dry cake mix
1 ½ sticks butter

Directions

Preheat oven to 350 degrees. Spray 9×13 pan. Mix all but the cake mix and butter and pour into pan. Sprinkle dry cake mix (I use white or yellow) over the top of the mixture then melt 1 ½ sticks of butter and pour on top. Sprinkle with 3/4 cups nuts (if you like nuts) and bake 1 hour; cool and top with Cool Whip.

Pumpkin Cake Recipe

Ingredients

3 eggs
1 C. sugar
1 tsp. cinnamon
1 29-oz. can pumpkin
1/2 tsp. ginger
1/4 tsp. cloves
1 14-oz. can evaporated milk
1 18-oz. box white cake mix (yellow)
1/2 C. butter, melted
1 C. walnuts or pecans

Directions

Preheat oven to 350 degrees. In a bowl, mix first 7 ingredients until blended. Pour into greased 9×13-inch pan. Sprinkle 1 pkg. of cake mix over top. Drizzle melted butter over top. Sprinkle with chopped nuts. Bake at 350 degrees for 1 hour.

Date Nut Pumpkin Cake Recipe

Ingredients

1 1/2 C. cooking oil
2 C. sugar
3 C. flour
4 tsp. baking soda
4 eggs
2 C. pumpkin
3 tsp. cinnamon
1 tsp. allspice
1 C. chopped walnuts
1 C. chopped dates

Directions

In mixing bowl, mix all ingredients together and add eggs, one at a time. Pour mixture into large tube pan and bake lr 1 hour at 350 degrees. Cool in pan for 20 minutes on a rack.

Pumpkin Dessert Recipe

This is so easy to make and it tastes like you have been baking all day. It taste like a pumpkin roll!

Ingredients

1 box angel food cake mix
1 lg. can pumpkin pie mix
1 lg. container Cool Whip

Directions

Preheat oven to 350 degrees. Mix dry cake mix and pumpkin pie mix together. Bake until toothpick comes out clean (about 30-40 minutes).

Cool completely. Frost with Cool Whip.

Pumpkin Roll Recipe

Ingredients

3 eggs
1 1/2 tsp. cinnamon
1 tsp. baking soda
3/4 C. flour
2/3 C. pumpkin
1 C. sugar
1 tsp. salt

Filling:
1 8-oz. pkg. cream cheese, softened
2 Tbs. butter
1 tsp. vanilla
1 C. powdered sugar
1/2 C. nuts, chopped (optional)

Directions

Line the cookie sheet with wax paper and grease paper well. Mix pumpkin and rest of ingredients. Blend until smooth.  Pour into cookie sheet. Bake in 350 degree-oven for 15 minutes. Remove and sprinkle with powdered sugar.  Flip over onto the towel. Peel off waxed paper and roll like a jelly roll. Leave in towel until completely cooled. Meanwhile, combine and beat filling ingredients until smooth. Unroll and spread with filling. Roll back up and keep refrigerated.

Gooey Pumpkin Butter Cake Recipe

This is another way to use pumpkin for Thanksgiving if you don’t want to make a simple pumpkin pie. I made it for my thanksgiving guests and they loved it. Tastes like pumpkin pie and vanilla cake put together.

Crust:
1 pkg. yellow cake mix
1 stick butter, melted
1 egg, beaten

Filling:
1 pkg. cream cheese, soften
1 stick of butter, soften
3 eggs
1 tsp. vanilla extract
1 can of canned pumpkin
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 C. sugar
