Pumpkin Macadamia Bars Recipe

Cinnamon, cloves and the macadamia crunch make a well-rounded bar.

Ingredients

2 C. flour
2 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. baking soda
1 C. butter or margarine, softened
1/2 C. sugar
1/2 C. brown sugar, packed
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. chopped Macadamia nuts

Directions

Combine flour, spices and baking soda in small bowl. Beat butter and sugars in large bowl until creamy. Beat in pumpkin, egg and vanilla until blended; gradually beat in flour mixture. Stir in 1 1/2 C. of  the white chips and the nuts. Spread into a greased 15 1/2×10 1/2 jelly roll pan. Bake in a preheated 350 degree oven for 18-20 minutes until toothpick comes out clean. Cool in pan on wire rack.

Pumpkin Cookies Recipe

My mom says this is a very moreish cookie - you can’t eat just one. Ha! This cookie is very good with vanilla coffee.

Ingredients

1 pouch Betty Crocker Sugar Cookie Mix
1 large egg
1/2 stick (4 Tbs.) butter, melted
1/2 15 oz. can pumpkin (about 1 1/4 C.)

Directions

Preheat oven to between 350 degrees. Mix together melted butter, egg, and pumpkin. Add pouch of sugar cookie mix and stir with wooden spoon until well blended. Mix will not form a soft ball. Spoon onto ungreased cookie sheet about 1-1 1/2 inches apart. Bake for 12-15 minutes. Cool on cookie sheet about 1 minute. Place on wire rack and cool completely.

Pumpkin Crunch Recipe

Ingredients

1 package 1 package yellow cake mix
1 can (16oz) solid packed pumpkin
1 can (12oz) evaporated milk
3 eggs
1 1/2 C. sugar
4 tsp. pumpkin pie spice
1/2-tsp. salt
1 C. chopped pecans
1 C. melted butter
Whipped topping

Directions

Preheat oven to 350 degrees. Grease bottom of 9×13 pan. Combine pumpkin, eggs, sugar, pumpkin pie spice, and salt in large bowl. Pour into pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans. Drizzle with melted butter. Bake for 50-55 minutes or until golden. Cool completely. Serve with whipped topping. Refrigerate leftovers.

Ingredients

1/2 C. (1 stick) butter, softened
1-1/4 C. brown sugar
2 eggs, beaten
1-1/2 C. pumpkin, canned or cooked
1-1/2 C. flour
1 Tbs. baking powder
1/4 tsp. ginger
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 C. walnuts, chopped

Directions

Preheat oven to 400 degrees F. Cream butter and sugar, then mix in eggs and pumpkin. Mix dry ingredients in sifter, and then sift into pumpkin mixture. Stir, and add nuts. Drop by spoonfuls onto a baking sheet. Bake for 15 minutes, or until lightly browned.
Yield: Makes about 5 dozen cookies.

Pumpkin Pasties Recipe

Ingredients

One package frozen pastry dough.

Filling:
1 C. canned, pureed pumpkin
1/2 C. light brown sugar
1 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. ginger
dash nutmeg

Directions

Preheat oven to 375 F. Thaw dough. Combine the filling ingredients in a mixing bowl and stir well. Beat one egg in a small bowl and set aside. Roll out one sheet until thin 1/16 inch and cut into 4 large circles Using half the beaten egg, brush around the edges of each pastry circle (with a pastry brush) Spoon equal amounts of pumpkin mixture into centers of circles. Fold circles in half to cover mixture and seal by crimping the edges. Brush tops of pasties with remaining beaten egg. Place on an ungreased cookie sheet. Bake for 25 - 30 minutes in the center of the oven until golden. Cool.

Ingredients

2 C. flour
2 tsp. cinnamon
1 tsp. ground cardamom
1 tsp. baking soda
1 C. butter, softened
1/2 C. sugar
1/2 C. packed brown sugar
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. coarsely chopped macadamia nuts, toasted

Directions

Combine first 4 ingredients in a small bowl. Beat butter and sugars in a large bowl until creamy. Beat in pumpkin, egg and vanilla until well mixed; gradually beat in flour mixture. Stir in chips and nuts. Drop by rounded Tbs. onto greased baking sheet; flatten slightly with back of spoon or greased bottom of glass dipped in sugar. Bake in preheated oven at 350 degrees for 11-14 minutes. Cool for 2 minutes, remove to wire rack to cool completely.
