Ingredients
* 1 1/2 C. healthy butter such as Smart Balance
* 1 C. Splenda
* 3 eggs
* 1 15 oz. can pumpkin
* 1 Tbs. ground cinnamon
* 1/2 tsp. ground nutmeg
* 1 1/2 tsp. vanilla extract
* 3 C. all-purpose flour
* 1 1/2 tsp. baking powder
* Craisins and toasted pecan pieces
Directions
Grease cookie sheets and preheat oven to 350 degrees. Mix butter and Splenda with mixer until well mixed. Add eggs, pumpkin, spices, vanilla. Sift dry ingredients together gradually add to pumpkin mixture, mixing by hand. Mix in Craisins and pecans. Drop onto cookie sheets bake 10-15 minutes or until slightly browned.

Ingredients
1/2 C. (1 stick) butter, softened
1-1/4 C. brown sugar
2 eggs, beaten
1-1/2 C. pumpkin, canned or cooked
1-1/2 C. flour
1 Tbs. baking powder
1/4 tsp. ginger
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 C. walnuts, chopped
Directions
Preheat oven to 400 degrees F. Cream butter and sugar, then mix in eggs and pumpkin. Mix dry ingredients in sifter, and then sift into pumpkin mixture. Stir, and add nuts. Drop by spoonfuls onto a baking sheet. Bake for 15 minutes, or until lightly browned.

These pumpkin cookies are perfect for a cool fall night in front of the fire with some tea.

Ingredients
2 C. flour
1 tsp. baking soda
1/2 tsp. salt
1 C. white sugar
1 egg
1/2 C. raisins (optional)
1 tsp. baking powder
1 tsp. cinnamon
1 C. shortening
1 C. pumpkin
1 tsp. vanilla
1/2 C. nuts, chopped (optional)
Directions
Preheat oven to 350 degrees. Sift flour, baking soda, baking powder, cinnamon and salt. Cream sugar and shortening. Add pumpkin and egg to creamed shortening. Add dry ingredients, nuts and raisins. Drop by teaspoonfuls on greased cookie sheet. Bake 10-12 minutes in oven.

15 oz. 100% pure pumpkin
2 1/2 C. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 C. white chocolate morsels
1/2 C. chopped macadamia nuts
Directions
Preheat oven to 350 degrees. Grease cookie sheets. Cream butter and sugar. Beat in vanilla, egg and pumpkin. Stir together flour, baking powder, baking soda, salt, cinnamon and macadamia nuts. Drop by rounded teaspoon onto cookie sheets. Bake for 12 minutes.

Ingredients
2 C. flour
2 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. baking soda
1 C. butter or margarine, softened
1/2 C. sugar
1/2 C. brown sugar, packed
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. chopped Macadamia nuts
Directions
Combine flour, spices and baking soda in small bowl. Beat butter and sugars in large bowl until creamy. Beat in pumpkin, egg and vanilla until blended; gradually beat in flour mixture. Stir in 1 1/2 C. of the white chips and the nuts. Spread into a greased 15 1/2×10 1/2 jelly roll pan. Bake in a preheated 350 degree oven for 18-20 minutes until toothpick comes out clean. Cool in pan on wire rack.

Ingredients
1 pouch Betty Crocker Sugar Cookie Mix
1 large egg
1/2 stick (4 Tbs.) butter, melted
1/2 15 oz. can pumpkin (about 1 1/4 C.)
Directions
Preheat oven to between 350 degrees. Mix together melted butter, egg, and pumpkin. Add pouch of sugar cookie mix and stir with wooden spoon until well blended. Mix will not form a soft ball. Spoon onto ungreased cookie sheet about 1-1 1/2 inches apart. Bake for 12-15 minutes. Cool on cookie sheet about 1 minute. Place on wire rack and cool completely.

Ingredients
1 package 1 package yellow cake mix
1 can (16oz) solid packed pumpkin
1 can (12oz) evaporated milk
3 eggs
1 1/2 C. sugar
4 tsp. pumpkin pie spice
1/2-tsp. salt
1 C. chopped pecans
1 C. melted butter
Whipped topping
Directions
Preheat oven to 350 degrees. Grease bottom of 9×13 pan. Combine pumpkin, eggs, sugar, pumpkin pie spice, and salt in large bowl. Pour into pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans. Drizzle with melted butter. Bake for 50-55 minutes or until golden. Cool completely. Serve with whipped topping. Refrigerate leftovers.
