Under Cakes+ Desserts
Although this recipe isn’t technically made with pumpkin we thought you’d get a kick out of it anyway. This sounds gross but it’s a big hit with the kids on Halloween, and it’s much easier to make than it looks.

Ingredients
1-2 box cakes, any flavor
1-2 bundt pans
white canned icing
food coloring
black icing in tube
gummy worms,bugs,etc.
“googly eyes”
1 regular ice crean cone
fondant or fruit rollup (red for mouth)

For a more modern dish, try pumpkin soufflé. It’s a great dessert to make for Thanksgiving or for a Halloween get together.

Ingredients
1 C mashed cooked pumpkin
1/2 tsp ground cinnamon
1/2 C firmly packed brown sugar
3 egg whites
1/8 tsp salt
Directions
Combine mashed cooked pumpkin with ground cinnamon and firmly packed brown sugar. Mix well. Beat 3 egg whites until stiff and salt. Fold into the pumpkin mixture. Then pour into greased 1-quart baking dish and set in a pan of hot water. Bake at 350 degrees F. for about 40 minutes.
Makes 4 to 6 servings.

Ingredients
15 or 16 oz. can solid pumpkin
1 box of 1 step angel food cake mix
1 C. water
1/2 tsp. pumpkin pie spice
Directions
Mix altogether and put in a sprayed 9×13 cake pan. Bake at 350 for 35 minutes.
12 servings.

Ingredients
2 C. flour
2 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. baking soda
1 C. butter or margarine, softened
1/2 C. sugar
1/2 C. brown sugar, packed
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. chopped Macadamia nuts
Directions
Combine flour, spices and baking soda in small bowl. Beat butter and sugars in large bowl until creamy. Beat in pumpkin, egg and vanilla until blended; gradually beat in flour mixture. Stir in 1 1/2 C. of the white chips and the nuts. Spread into a greased 15 1/2×10 1/2 jelly roll pan. Bake in a preheated 350 degree oven for 18-20 minutes until toothpick comes out clean. Cool in pan on wire rack.

l/4 C. heavy cream
l 10-inch spring form pan
Walnut topping:
6 Tbs. butter
l/2 - 3/4 C. light brown sugar
l C. coarsely chopped walnuts
beat in small bowl all above ingredients for topping.

This pumpkin pie recipe has the perfect amount of spice and is decorated with dark chocolate frosting!

Ingredients
1 1/2 C. pumpkin puree (canned or fresh)
3/4 C. honey
1/2 C. heavy cream
1/2 C. sour cream
2 eggs (separate whites from yolks)
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground ginger
dash ground nutmeg
1/8 tsp. allspice
1 pre-made 9-inch pie crust or 6-12 mini tart crusts
Optional:
chocolate frosting for decoration
Directions
In a large mixing bowl, mix heavy cream, sour cream, pumpkin puree (see How To Make Pumpkin Puree), honey, salt, cinnamon, ginger, nutmeg and allspice. Crack eggs and separate yolks from whites. Beat yolks and add them to the batter and mix. Beat egg whites separately until bubbly and stiff. Fold into the pumpkin pie mixture.

Looking for something different for the holidays? This pumpkin cheesecake is absolutely phenomenal. It has a pumpkin cheesecake filling with a vanilla cheesecake top layer. The crust is made with gingersnaps which complement the spicy pumpkin filling perfectly. If you are not in love with gingersnaps, substitute vanilla wafers for the crumbs.

This is a refrigerator pie that needs no cooking and combines the flaver of pumpkin with everyone’s favorite: ice cream!

Ingredients
2 graham cracker crusts
1 8-oz. pkg. cream cheese, softened
1/3 C. brown sugar
1 Tbs. pumpkin pie spice
1 16-oz. can pumpkin
4 C. softened, not melted, old fashioned vanilla ice cream
whipped cream
cinnamon
Directions
Blend cream cheese, brown sugar and pie spice. Add pumpkin; mix well. Blend in ice cream. Divide between two graham cracker crusts. Cover with plastic wrap, then foil, and freeze for 1 hour. Thaw slightly before serving. Garnish with whipped cream and cinnamon.
