* Filling:
* 4 oz. cream cheese,
* 2 Tbs. brown sugar
* 1-1/2 tsp. maple flavoring

* Muffins:
* 2 C. flour
* 3/4 C. brown sugar
* 1/2 C. chopped walnuts
* 2 tsp. baking powder
* 1 tsp. ground cinnamon
* 1/2 tsp. baking soda
* 1/4 tsp. salt
* 2 eggs
* 1 C. canned pumpkin
* 3/4 C. evaporated milk
* 1/4 C. vegetable oil
* 2 tsp. maple flavoring

* Topping:
* 2 Tbs. brown sugar
* 1/4 C. chopped walnuts

Mini Pumpkin Muffin Mix in a Bag Recipe

Ingredients

* 1 1/2 C. all-purpose flour
* 2 tsp. baking powder
* 3/4 tsp. salt
* 1/2 C. sugar
* 1/2 tsp. cinnamon
* 1/2 tsp. nutmeg
* 1/2 C. raisins (optional)

Directions

Mix together these ingredients and place in zipper style bag.

Attach the following recipe:

“Mini Pumpkin Muffins”

Ingredients

1/4 C. shortening

1 egg, beaten

1/2 C. pumpkin

1/2 C. milk

Directions

Place mix in a bowl. Cut in shortening until fine. Add other ingredients. Mix until flour mixture is moistened. Fill greased or paper line mini muffin pans 2/3 full. Bake in 400° F oven for 15 - 20 minutes, or until done. Makes 1-3 dozen muffins depending on size.

Sausage Pumpkin Cornbread Stuffing Recipe

Ingredients

3/4 lb. sweet Italian sausage, casings removed
2 jalapeños, minced (with seeds)
12 corn muffins or two 8 1/2-oz. corn-bread mixes, prepared and crumbled (10 C.)
1 15-oz. can pumpkin
1 14-oz. can chicken or vegetable broth
1 C. dried cranberries
1/4 C. chopped fresh sage or 1 heaping Tbs. dried sage

Directions

In a large skillet over medium heat, cook the sausage and jalapeños, breaking up the meat and cooking until it is no longer pink. Drain the fat. Add the corn bread. Fold in the pumpkin, broth, cranberries, and sage. Cook for 45 minutes in a 350-degree oven.

Pumpkin Chocolate Chip Muffin Recipe

I use the Trader Joe’s Pumpkin Bread mix and it’s SO easy! The flavor has a delicious spice to it and the chocolate chips smooth it out. The muffins are a fun to-go option.

Ingredients

2 eggs
1/2 C. oil
1 C. water
1 pkg. Trader Joe’s pumpkin bread mix
1/2 C. chocolate Chips

Directions

Preheat oven to 350 degrees F. Combine eggs, oil and water in a medium bowl. Add in mix and fold with rubber spatula until combined - about 2 minutes. Add in chocolate chips (or anything else you want…) and fold in. Pour into greased muffin tin. Bake 18-20 minutes or until toothpick comes out clean.

Natural bran and whole wheat flour make these savory muffins quite healthy too. A traditional Samhain recipe, it includes pumpkin and cinnamon with raisins for sweetness.

Ingredients

3/4 C. natural bran
3/4 C. whole wheat flour
3/4 C. granulated sugar
1 1/2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 C. raisins
1 C. mashed or canned cooked pumpkin
2 eggs, unbeaten
1/2 C. vegetable oil
1/2 C. plain yogurt or buttermilk

Directions

In bowl, combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt and raisins; toss to mix. Add pumpkin, eggs, oil and yogurt; stir just combined. Spoon batter into paper-lined or nonstick muffin tins. Bake in 400 degree oven for 25 minutes or until firm to the touch.

Pumpkin Cheesecake Muffins Recipe

Ingredients

Filling:
1 8-oz. pkg. cream cheese, softened
1 egg
2 Tbs. granulated sugar
2 tsp. lemon peel

Muffins:
1 14-oz. pkg Pillsbury Pumpkin Quick Bread
3/4 C. milk
2 Tbs. vegetable oil
1 egg
3 Tbs. butter, melted
1/4 C. chopped pecans

Directions

Heat oven to 350 degrees. Spray 12 muffin cups with non-stick spray.

Beat cream cheese in a medium mixing bowl with electric mixer until soft. Add egg, sugar and lemon peel. Beat until smooth.

Empty pumpkin bread mix into large bowl. Remove 3/4 C. dry mix and set aside in small bowl to make topping. Add milk, oil, and egg to remaining bread mix in large bowl. Stir 50 strokes or until blended.

Ingredients

1 C. cooked pumpkin or canned
1/2 C. sugar
1/2 C. margarine
1 egg, beaten
1 Tbs. molasses
2 C. sifted flour (sift before measuring)
1/4 tsp. cloves
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. mace
1 tsp. baking powder
1 tsp. salt
1 tsp. soda
3/4 C. buttermilk
1/2 C. chopped pecans
1/2 C. raisins

Directions

Blend together sugar and margarine. Add pumpkin, molasses and egg. Sift flour with baking powder and spices. Add soda to buttermilk. Mix raisins and nuts with 1/2 C. of sifted flour and spices. Add the rest of flour alternately with buttermilk to creamed mixture. Add raisins and nuts. Place in well greased muffin tins. Bake at 375 degrees for 20 minutes. If very large tin, bake 25 minutes.

Ingredients

2 C. flour
3/4 C. packed brown sugar
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/8 tsp. nutmeg
3/4 C. canned pumpkin
1/2 C. butter, melted and cooled
1/4 C. buttermilk
2 eggs, lightly beaten
3 Tbs. molasses
1 tsp. vanilla
3/4 C. coarsely chopped pecans or walnuts
3/4 C. chopped dates (optional)

Directions

Preheat oven to 400 degrees. Grease twelve muffin cups. In a large bowl, stir together first 9 ingredients. In another bowl, stir together pumpkin, butter, buttermilk, eggs, molasses and vanilla until blended. Make a well in center of dry ingredients; add pumpkin mixture and stir just to combine. Stir in pecans and dates.
