Under Breads+ Desserts+ pudding
A rich and delicious dessert any time of year, but an especially fun variation for Thanksgiving.

Ingredients
* 1 lb. firm French bread
* 2 C. Half & Half (half milk, half cream)
* 1 1/2 C. sugar
* 3 eggs
* 15 oz. pumpkin pie mix (seasoned)
* 1/2 C. raisins
* 1/2 C. pecans
* whipped cream
Directions
Lightly grease a medium casserole dish. Pre-heat the oven to 350 degrees. Tear the bread into medium pieces. Add to a mixing bowl. Sprinkle on the sugar. In a separate bowl, lightly beat the eggs. Add Half & Half and pumpkin mix. Toss the mixture with the bread. Place half in the casserole. Add the raisins and pecans. Top with the other half of the mixture. Bake for 25-35 minutes or until firm and lightly brown. Serve warm with whipped cream.

This dessert is especially popular around Thanksgiving, Christmas and New Year’s. It’s quite tasty too.

Ingredients
- 2 Tbs. bourbon or 2 Tbs. orange juice plus 1 tsp. vanilla
- 1/4 C. golden raisins or dark raisins
- Nonstick cooking spray
- 1 slightly beaten egg white
- 1 slightly beaten egg
- 1 (15 oz.) can pumpkin
- 1 (5 oz. can) evaporated milk, or 2/3 C.
- 1/2 C. packed brown sugar
- 1 tsp. pumpkin pie spice
- 1/3 C. quick cooking rolled oats
- 2 Tbs. brown sugar
- 2 tsp. butter or margarine, melted

As if there aren’t enough pumpkin desserts, here’s one more! Smooth, creamy, delicious pumpkin custard.

Ingredients
1 16-oz. can pumpkin puree
1/2 Tbs. cinnamon
1/4 Tbs. ginger
1/8 tsp. nutmeg
a pinch of sea salt
a few drops of Stevia (sweetener)
1/2 C. heavy cream
1/8 C. water
3 beaten eggs
Directions
Mix sea salt, all of the spices, and Stevia together with the pumpkin puree. (For those of you who may not be familiar with Stevia, it’s an all-natural, calorie-free herbal sweetener.) Mix in the eggs, and then add cream and water. Pour into buttered 4-oz. custard cup. Place in baking dish and add 1/2 inch of water. Bake at 350 degrees for 30 to 40 minutes, until custard is set.

For a lower-carb pudding, use fat free low sugar or sugar free vanilla yogurt!

Ingredients
1 sm. can pumpkin
2 containers fat free low sugar vanilla pudding
cinnamon to taste
nutmeg to taste
Splenda to taste
Directions
Mix all ingredients together; keep in refrigerator until ready to serve. Add whipped cream topping.

There is nothing better then serving up some pumpkin custard during the Halloween season.

Ingredients
1 1/2 C. cooked and mashed pumpkin
1/4 tsp. ginger
1/4 tsp. nutmeg
1 tsp. cinnamon
3 eggs
1 tsp. salt
1 C. cream or half and half
1 Tbs. butter
2 Tbs. molasses
1/2 C. sugar
1/4 C. sweetened whipped cream
1/4 C. finely crushed nuts
Directions
Combine the pumpkin, sugar, spices and molasses. Beat until well mixed. Mix beaten eggs with milk and salt. Cook in double boiler until it reaches a soft custard stage-where it coats a spoon. Remove from the heat and mix well with the pumpkin mixture. Turn into six small baking dishes and set in a pan of hot water to bake at 350 degrees for 40 minutes. To serve, turn out and top with whipped cream and the crushed nuts.
