Stuffed Pumpkin Recipe

A fantastic fall dish with lots of yummy ingredients! A beautiful presentation!

Ingredients

* 1 8-10 inch pumpkin
* 1 C. cranberries
* 1/2 C. dates
* 1/3 C. walnuts
* 1 C. tart apples, cored and chopped
* 1/4 C. brown sugar
* 1 tsp. cinnamon
* 1/4 tsp. ground cloves
* 1/4 tsp. ground allspice
* 1/4 tsp. nutmeg
* 1 tsp. lemon rind, grated
* 1 Tbs. orange rind, grated

Directions

Cut top off the pumpkin and save. Scoop out inside. Combine all ingredients and fill pumpkin. Bake without top for 45 minutes at 350 degrees. Place top on pumpkin and continue baking for 30 minutes. Serve warm.

Sausage Pumpkin Cornbread Stuffing Recipe

This fantastic recipe from Real Simple is quickly becoming the norm for our Thanksgiving feasts!

Ingredients

3/4 lb. sweet Italian sausage, casings removed
2 jalapeños, minced (with seeds)
12 corn muffins or two 8 1/2-oz. corn-bread mixes, prepared and crumbled (10 C.)
1 15-oz. can pumpkin
1 14-oz. can chicken or vegetable broth
1 C. dried cranberries
1/4 C. chopped fresh sage or 1 heaping Tbs. dried sage

Directions

In a large skillet over medium heat, cook the sausage and jalapeños, breaking up the meat and cooking until it is no longer pink. Drain the fat. Add the corn bread. Fold in the pumpkin, broth, cranberries, and sage. Cook for 45 minutes in a 350-degree oven.

I like this recipe, and have used it for everything as side dish as well as a mainstay for supper. It is an easy, delicious entree for this time of year.

Ingredients

4 oz. pork sausage
1/2 C. chopped onion
1 sm. pumpkin cored, seeded
pumpkin meat cut into 3/4 in. pieces
1/2 C. chopped granny smith apple
1/4 C. white wine
1 C. brown rice (already cooked or use minute rice)
1/4 C. dried cranberries
1 Tbs. olive oil
1 tsp. thyme
1 tsp. fresh oregano
1/2 tsp. salt
1/4 tsp. fresh ground pepper

Directions

Preheat oven to 350 degrees.

4 small pumpkins (about 4 to 5 inches in diameter)
2 C. whole wheat bread cubes
1/2 C. thinly sliced carrots
1 C. diced onion
1/2 C. chicken broth
1 tsp. dried thyme or fresh can be used (2 tsp.)
1 tsp. dried oregano
1/2 tsp. pepper salt to taste
1/4 C. minced fresh parsley
1 tsp. olive oil
