Easy Stuffed Pumpkin Recipe

Pumpkin stuffed with a mixture of rice and ground beef is a very attractive and colorful dish. It is easy to make and makes a satisfying, healthy meal. It’s delicious.

Ingredients
1 small pumpkin, halved, seeds removed
2/3 C. uncooked rice
1 lb. ground beef
1/2 C. chopped onion
1/2 C. shredded red cabbage
Italian seasoning
Garlic salt
Sea salt
Pepper
1 Tbs. olive oil
1 egg, slightly beated
3-4 Saltine-type crakers, crushed
Directions
Cook rice in rice cooker or on stovetop according to directions. Remove seeds and stringy interior of pumpkin halves with a large spoon or ice cream scoop. Saute onions and cabbage in olive oil and set aside. Crumble and brown ground beef in skillet and season with Itailian seasoning, garlic salt, sea salt and pepper to taste.
In a large mixing bowl combine the cooked rice, seasoned ground beef, sauted onion and cabbage, egg and crackers. Place pumpkin halves in shallow baking dish containing 1/2 inch of water to prevent pumpkin drying out. Carefully fill each pumpkin half with the rice/beef mixture and loosely cover the halves with aluminum foil. Bake in 375 degree oven for appoximately 1 1/2 hours or until the pumpkin pierces easily with folk.
