Pumpkin Muffins Recipe

Natural bran and whole wheat flour make these savory muffins quite healthy too. A traditional Samhain recipe, it includes pumpkin and cinnamon with raisins for sweetness.

Ingredients

3/4 C. natural bran
3/4 C. whole wheat flour
3/4 C. granulated sugar
1 1/2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 C. raisins
1 C. mashed or canned cooked pumpkin
2 eggs, unbeaten
1/2 C. vegetable oil
1/2 C. plain yogurt or buttermilk

Directions

In bowl, combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt and raisins; toss to mix. Add pumpkin, eggs, oil and yogurt; stir just combined. Spoon batter into paper-lined or nonstick muffin tins. Bake in 400 degree oven for 25 minutes or until firm to the touch.

Ingredients

2/3 C. milk
1/2 C. (1 stick) butter or margarine
1/4 C. water
4 C. all-purpose flour, divided
1/3 C. granulated sugar
1 package quick-rising yeast
2 tsp. dried savory leaves, crushed
1 tsp. salt
3/4 tsp. dried thyme leaves, crushed
1/2 tsp. dried dill weed, crushed
1 C. canned pumpkin
4 eggs, divided
2 Tbs. sesame seeds

Pumpkin Cheesecake Muffins Recipe

These tasty pumpkin cheesecake muffins are quick and delicious!

Ingredients

Filling:
1 8-oz. pkg. cream cheese, softened
1 egg
2 Tbs. granulated sugar
2 tsp. lemon peel

Muffins:
1 14-oz. pkg Pillsbury Pumpkin Quick Bread
3/4 C. milk
2 Tbs. vegetable oil
1 egg
3 Tbs. butter, melted
1/4 C. chopped pecans

Directions

Heat oven to 350 degrees. Spray 12 muffin cups with non-stick spray.

Beat cream cheese in a medium mixing bowl with electric mixer until soft. Add egg, sugar and lemon peel. Beat until smooth.

Empty pumpkin bread mix into large bowl. Remove 3/4 C. dry mix and set aside in small bowl to make topping. Add milk, oil, and egg to remaining bread mix in large bowl. Stir 50 strokes or until blended.

1 package dry yeast
1 C. Unbleached all-purpose flour
1 C. Bread flour
1/2 C. Brown sugar, packed
1 tsp. ground cinnamon
2 Tbs. Melted butter

Pumpkin Muffins Recipe

These pumpkin muffins are a wonderful Thanksgiving morning treat.

Ingredients

1 C. cooked pumpkin or canned
1/2 C. sugar
1/2 C. margarine
1 egg, beaten
1 Tbs. molasses
2 C. sifted flour (sift before measuring)
1/4 tsp. cloves
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. mace
1 tsp. baking powder
1 tsp. salt
1 tsp. soda
3/4 C. buttermilk
1/2 C. chopped pecans
1/2 C. raisins

Directions

Blend together sugar and margarine. Add pumpkin, molasses and egg. Sift flour with baking powder and spices. Add soda to buttermilk. Mix raisins and nuts with 1/2 C. of sifted flour and spices. Add the rest of flour alternately with buttermilk to creamed mixture. Add raisins and nuts. Place in well greased muffin tins. Bake at 375 degrees for 20 minutes. If very large tin, bake 25 minutes.

Pumpkin Pie Muffins Recipe

These easy muffins have lots of traditional Samhain ingredients including ginger, nutmeg, nuts and dates.

Ingredients

2 C. flour
3/4 C. packed brown sugar
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/8 tsp. nutmeg
3/4 C. canned pumpkin
1/2 C. butter, melted and cooled
1/4 C. buttermilk
2 eggs, lightly beaten
3 Tbs. molasses
1 tsp. vanilla
3/4 C. coarsely chopped pecans or walnuts
3/4 C. chopped dates (optional)

Directions

Preheat oven to 400 degrees. Grease twelve muffin cups. In a large bowl, stir together first 9 ingredients. In another bowl, stir together pumpkin, butter, buttermilk, eggs, molasses and vanilla until blended. Make a well in center of dry ingredients; add pumpkin mixture and stir just to combine. Stir in pecans and dates.

Pumpkin Apple Muffins Recipe

This is a fabulously fall recipe with delicious pumpkin flavor and chunks of real apples.

Ingredients

1 2/3 C. flour
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1 Tbs. pumpkin pie spice
1 C. sugar
1 C. canned pumpkin
1/2 C. butter or margarine, melted
2 large eggs, lightly beaten
1 granny smith apple, peeled and finely chopped
3 Tbs. sugar
1 tsp. pumpkin pie spice

Directions

Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine pumpkin, butter, and eggs, and add to dry ingredients, stirring just until moistened. Fold in chopped apple, and spoon into greased muffin pans, filling two-thirds full. Combine 3 Tbs. sugar and 1 tsp. pumpkin pie spice; sprinkle evenly over muffins. Bake at 350 degrees for 20 minutes. Remove from pans immediately, and cool on wire racks.

Low-Fat Pumpkin Muffins Recipe

This is a festive fall favorite, and with so little fat, there’s no reason not to eat ‘em up!

Ingredients

1 1/4 C. old-fashioned (or quick) oatmeal
1 C. whole wheat flour (or white)
1 tsp. baking powder
1/2 tsp. baking soda
1/3 C. milk (1% or skim)
1 C. canned pumpkin
1/2 C. honey or 3/4 C. brown sugar
1 tsp. vanilla
1/2 tsp. salt (optional)
1/4 C. egg replacer (or 1 egg)
1 tsp. cinnamon
1/2 tsp. mace
1/2 tsp. nutmeg
1/4 tsp. allspice or 1 1/2 tsp. pumpkin pie spice

Directions

Combine dry ingredients in one bowl, wet ingredients in another. Combine both, stir. Place in muffin tins. Bake at 375 degrees for 25-30 minutes. Makes 12 muffins, can be doubled.
