Pumpkin Macadamia Bars Recipe

Cinnamon, cloves and the macadamia crunch make a well-rounded bar.

Ingredients

2 C. flour
2 tsp. ground cinnamon
1 tsp. ground cloves
1 tsp. baking soda
1 C. butter or margarine, softened
1/2 C. sugar
1/2 C. brown sugar, packed
1 C. solid pack pumpkin
1 egg
2 tsp. vanilla
2 C. white chocolate chips
2/3 C. chopped Macadamia nuts

Directions

Combine flour, spices and baking soda in small bowl. Beat butter and sugars in large bowl until creamy. Beat in pumpkin, egg and vanilla until blended; gradually beat in flour mixture. Stir in 1 1/2 C. of  the white chips and the nuts. Spread into a greased 15 1/2×10 1/2 jelly roll pan. Bake in a preheated 350 degree oven for 18-20 minutes until toothpick comes out clean. Cool in pan on wire rack.

4 eggs
1 C. vegetable oil
1 15-oz. can pumpkin (not pie mix)
2 C. sugar
2 C. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1/2 C. chopped walnuts

Cream Cheese Frosting
1 3-oz. pkg. cream cheese, softened
1/3 C. butter or margarine, softened
1 tsp. vanilla
2 C. powdered sugar

1/4 C. sweet almond oil (or other vegetable oil)
2 tsp. Brown Sugar Twin®
3/4 C. Splenda®
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ground cloves
1/4 tsp. ginger
1 tsp. vanilla extract
1/2 C. chopped walnuts or pecans

Pumpkin Swirl Squares Recipe

Ingredients

16 oz. can pumpkin
1 3/4 C. sugar
1/2 C. oil
3 eggs
2 C. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
8 oz. cream cheese, softened

Directions

Combine pumpkin, 1 1/2 C. sugar, oil and 2 eggs, mixing until well blended. Combine dry ingredients. Add to pumpkin mixture and blend well. Combine cream cheese with remaining sugar and egg until well blended. Spoon pumpkin mixture into greased and floured 11×10x1 inch jelly roll pan. Spoon cream cheese over pumpkin batter. Cut through batter with knife several times for marble effect. Bake at 350 degree for 25-30 minutes or until toothpick inserted in center comes out clean. Cool and cut into squares.

Pumpkin Pie Dessert Recipe

This original dessert uses cake mix for the crust and topping with that special pumpkin filling.

Ingredients

Crust:
1 yellow cake mix (save 1 C. for topping)
1 egg
1/2 C. butter

Filling:
3 C. cooked pumpkin
2 1/2 tsp. pumpkin pie spice
1/2 C. brown sugar
2 eggs
2/3 C. milk

Topping:
1 C. cake mix
1/4 C. white sugar
1/4 C. butter
1 tsp. cinnamon

Directions

To make crust, mix ingredients together and press into a 9×13 greased and floured pan.

To make filling, combine all ingredients.

To make topping, combine and sprinkle over filling. Bake 45-55 minutes at 350 degrees until knife inserted in center comes out clean.

Pumpkin Crunch Recipe

Ingredients

1 package 1 package yellow cake mix
1 can (16oz) solid packed pumpkin
1 can (12oz) evaporated milk
3 eggs
1 1/2 C. sugar
4 tsp. pumpkin pie spice
1/2-tsp. salt
1 C. chopped pecans
1 C. melted butter
Whipped topping

Directions

Preheat oven to 350 degrees. Grease bottom of 9×13 pan. Combine pumpkin, eggs, sugar, pumpkin pie spice, and salt in large bowl. Pour into pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans. Drizzle with melted butter. Bake for 50-55 minutes or until golden. Cool completely. Serve with whipped topping. Refrigerate leftovers.

1/2 C. crushed gingersnap cookies

2 8 oz. pkg. cream cheese, softened
1 C. sugar
1 C. canned pumpkin (not pumpkin pie mix)
2 Tbs. Gold Medal® all-purpose flour
1 Tbs. pumpkin pie spice
2 Tbs. whipping cream
2 eggs

Toppings:
1/3 C. chocolate topping
1/3 C. caramel topping
