This recipe was handed down by a Canadian Indian woman. It has an unusually soft texture due to the mashed pumpkin

Ingredients
1/2 C. soft margarine or softened butter
1 C. sugar
4 eggs
2 C. (16 oz) canned mashed pumpkin
1 C. milk
2 C. corn meal
3 C. flour
1 1/2-2 Tbs. baking powder
2 tsp. salt
2 C. blueberries (optional)
1 C. walnut pieces, freshly shelled only (optional)
Directions
Preheat oven to 350 degrees. Grease and flour two 9×5 inch loaf pans. Beat together margarine, sugar, and eggs until smooth. Beat in pumpkin and cornmeal. Combine flour, baking powder, and salt and add to batter. Mix until combined. Optional: Fold in blueberries and nuts. Pour into loaf pans. Bake at 350 degrees for 1-1 1/4 hours. Cool 10 minutes in pans; then turn out on a wire rack.

1 15-oz. can pumpkin puree
4 eggs
1 C. vegetable oil
2/3 C. water
3 C. white sugar
3 1/2 C. all-purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. ground ginger
1/2 tsp. allspice
1/2 tsp. vanilla extract
1 C. nuts (I use pecans)

This apple, pumpkin, and spice bread, made in a coffee can, ushers in the fall season.

Ingredients
3 1/2 C. flour
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. ginger
3 C. sugar
1 tsp. salt
1 C. vegetable oil
4 whole eggs
1 1/2 C. canned pumpkin
2/3 C. apple cider
1/2 C. thick applesauce
Directions
Stir together ingredients from flour through salt. Make a well in the center and add the other ingredients in order. Mix everything until smooth. Pour into greased and floured pan. Makes two 8 1/2 x 1 1/2 x 2 1/2 loaves. Can also be baked in one-lb. coffee cans. If baked in can, fill 2/3 full. Makes 3 baked 1 hour at 350 degrees.

Ingredients
4 eggs, beaten and placed in large bowl
1 C. vegetable oil
1/2 C. water
1 C. canned pumpkin (not pie filling)
1 1/4 C. molasses
1 C. brown sugar
3 C. whole-wheat flour
1 1/2 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ground cloves
Chopped walnuts (optional)
Directions
Beat eggs and place in large bowl. Add vegetable oil, water, pumpkin, molasses and brown sugar. Sift in remaining ingredients. Stir everything together until the batter is smooth. If you like, you can add some chopped walnuts at this time. Butter 2 loaf pans and pour batter 2/3 full in each. Bake 45 minutes to 1 hour. Let cool and invert pan. Good with cream cheese spread on each slice.

This pumpkin bread recipe is one of the easiest breakfast breads you can make! I learned this from an attendee at one of my Weight Watchers classes. It’s simple, easy and low in calories!

Ingredients
1 box spice cake mix
1 15-oz. can pumpkin
Directions
Empty the cake mix and the pumpkin together. No other ingredients are needed. Place into a greased bread pan and bake for 35 minutes at 400 degrees or until a toothpick comes out clean when inserted into the middle of the loaf.
NOTE: I think this tastes better if stored in the refrigerator.

A delicious pumpkin bread recipe that’s easy to make. This is a family recipe. We make this bread as gifts for Christmas but this can be enjoyed anytime.

Ingredients
3 C. sugar
1 tsp. cinnamon
3 1/2 C. all-purpose flour
1 C. oil
2/3 C. water
1 tsp. nutmeg
4 eggs
2 C. pumpkin (canned, found in bakery aisle)
1 C. chopped walnuts
1 1/2 tsp. salt
3 tsp. baking soda
Directions
In a large mixing bowl, add all ingredients to bowl. Mix thoroughly. Preheat oven to 350 degrees. Pour pumpkin batter into a loaf pan, filling halfway. Bake for 1 hour.

My mom says this is a very moreish cookie - you can’t eat just one. Ha! This cookie is very good with vanilla coffee.

Ingredients
1 pouch Betty Crocker Sugar Cookie Mix
1 large egg
1/2 stick (4 Tbs.) butter, melted
1/2 15 oz. can pumpkin (about 1 1/4 C.)
Directions
Preheat oven to between 350 degrees. Mix together melted butter, egg, and pumpkin. Add pouch of sugar cookie mix and stir with wooden spoon until well blended. Mix will not form a soft ball. Spoon onto ungreased cookie sheet about 1-1 1/2 inches apart. Bake for 12-15 minutes. Cool on cookie sheet about 1 minute. Place on wire rack and cool completely.
