* 4 Tbs. (1/2 stick) unsalted butter, melted

* Filling:
* 1 C. pumpkin
* 1 C. turbinado sugar
* 2 C. heavy cream
* 1 lb. (2 8-oz. pkgs.) cream cheese
* 2 eggs
* 2 egg yolks

* Caramel:
* 1/2 C. sugar
* 1/2 Tbs. corn syrup
* 2 Tbs. water
* 1/4 C. heavy cream, heated
* 1 Tbs. butter
* 1/2 tsp. vanilla

* 1 tsp. ground cinnamon

* Topping:
* 2 Tbs. brown sugar

Pumpkin Scones Recipe

A deliciously creative use for pumpkin during the fall season, these orangey scones look festive on a platter.

Ingredients

* 2 oz. butter
* 1/2 C. sugar
* 1 egg
* 1 C. cold mashed pumpkin
* 2 C. self-rising flour

Directions

Cream butter and sugar, add egg. Add pumpkin. Add sifted flour and mix well. Put in Tbs. heaps on a greased pan or in muffin pan. Bake in hot 400 degree oven about 15 minutes.

Yield: approximately 12-15 scones

Ingredients

* 1 1/2 C. all-purpose flour
* 2 tsp. baking powder
* 3/4 tsp. salt
* 1/2 C. sugar
* 1/2 tsp. cinnamon
* 1/2 tsp. nutmeg
* 1/2 C. raisins (optional)

Directions

Mix together these ingredients and place in zipper style bag.

Attach the following recipe:

“Mini Pumpkin Muffins”

Ingredients

1/4 C. shortening

1 egg, beaten

1/2 C. pumpkin

1/2 C. milk

Directions

Place mix in a bowl. Cut in shortening until fine. Add other ingredients. Mix until flour mixture is moistened. Fill greased or paper line mini muffin pans 2/3 full. Bake in 400° F oven for 15 - 20 minutes, or until done. Makes 1-3 dozen muffins depending on size.

Pumpkin Pasties Recipe

Ingredients

* One package frozen pastry dough.

Filling:
* 1 C. canned, pureed pumpkin
* 1/2 C. light brown sugar
* 1 tsp. cinnamon
* 1/4 tsp. cloves
* 1/4 tsp. ginger
* dash nutmeg

Directions

Preheat oven to 375 F. Thaw dough. Combine the filling ingredients in a mixing bowl and stir well. Beat one egg in a small bowl and set aside. Roll out one sheet until thin 1/16 inch and cut into 4 large circles Using half the beaten egg, brush around the edges of each pastry circle (with a pastry brush) Spoon equal amounts of pumpkin mixture into centers of circles. Fold circles in half to cover mixture and seal by crimping the edges. Brush tops of pasties with remaining beaten egg. Place on an ungreased cookie sheet. Bake for 25 - 30 minutes in the center of the oven until golden. Cool.

Pecan Glazed Pumpkin Pie Recipe

Ingredients

* 2 large eggs
* 1 (16-oz.) can solid pack pumpkin
* 1 (12-oz.) can evaporated milk
* 1 C. brown sugar, packed; divided
* 2 tsp. pumpkin pie spice
* 1 deep dish pie crust, frozen
* 1-C. pecans, chopped
* 1/4-C. butter, melted

Directions

Preheat oven to 375 F. In large bowl, using a wire whisk, whisk together eggs, pumpkin, evaporated milk, 3/4 C. brown sugar and pumpkin pie spice. Place frozen pie crust on preheated baking sheet. Pour filling into crust. Bake 40 minutes. In small bowl, combine remaining 1/4 C. sugar, pecans and melted butter. Crumble over top of partially baked pie. Bake an additional 30 minutes, or until tested done.

Pumpkin Bread Recipe

Ingredients

  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1-1/2 C. sugar
  • 4 eggs
  • 1/2 tsp. salt
  • 1 C. oil
  • 1 C. pumpkin, canned
  • 2/3 C. water
  • 1 tsp. baking soda
  • 3 C. flour
  • 1 C. chopped nuts

Directions

Combine nutmeg, cinnamon, sugar, eggs, salt, and oil and beat well into a creamy consistency. Add all the remaining ingredients and mix together. Pour into a greased and floured 12-C. Bundt pan. Bake in a 350 degrees F oven for about 45 minutes — until toothpick inserted in center comes out clean. Do not overcook.

Pumpkin Souffle Recipe

Ingredients

1 C. mashed cooked fresh pumpkin
1/2 tsp. cinnamon
1/2 C. brown sugar
3 egg whites
1/8 tsp. salt

Directions

Preheat oven to 350 degrees. Grease 1 quart baking dish. Combine pumpkin, cinnamon, and brown sugar. Mix well. Beat egg whites until stiff, adding salt. Fold into pumpkin mixture.

Pour into prepared dish. Set in pan of hot water. Bake for 40 minutes, or until done.

Pumpkin Fudge Recipe

Ingredients

1 C. milk
3 C. sugar
3 Tbs. light corn syrup
1/2 C. pumpkin
dash salt
1/2 tsp. cinnamon
1/2 tsp. allspice
4 Tbs. margarine
1 tsp. vanilla

Directions

Combine milk, sugar, corn syrup, pumpkin, and salt in a large pan. Cook over medium heat until boiling, stirring constantly. When mixture comes to a full boil, reduce heat and simmer until mixture comes to the softball stage. Remove from heat. Beat in cinnamon, allspice, margarine, and vanilla. Cool, then beat until thick and mixture loses its gloss. Spoon into buttered dish.

Pumpkin Cake Recipe

Ingredients

3 eggs
1 C. sugar
1 tsp. cinnamon
1 29-oz. can pumpkin
1/2 tsp. ginger
1/4 tsp. cloves
1 14-oz. can evaporated milk
1 18-oz. box white cake mix (yellow)
1/2 C. butter, melted
1 C. walnuts or pecans

Directions

Preheat oven to 350 degrees. In a bowl, mix first 7 ingredients until blended. Pour into greased 9×13-inch pan. Sprinkle 1 pkg. of cake mix over top. Drizzle melted butter over top. Sprinkle with chopped nuts. Bake at 350 degrees for 1 hour.
