Ingredients
1 C. cooked, mashed pumpkin
1 Tbs. cornstarch
1/2 C. brown sugar
1/2 C. granulated sugar
1 C. milk
1 Tbs. browned butter
1 tsp. cinnamon
2 eggs, separated
Directions
Combine all ingredients except egg whites and mix well. Beat the egg whites until soft peaks and fold into pumpkin mixture. Spoon into a greased baking dish. Bake at 375 degrees for 40 minutes or until a
knife comes out clean.

Ingredients
1 C. milk
3 C. sugar
3 Tbs. light corn syrup
1/2 C. pumpkin
dash salt
1/2 tsp. cinnamon
1/2 tsp. allspice
4 Tbs. margarine
1 tsp. vanilla
Directions
Combine milk, sugar, corn syrup, pumpkin, and salt in a large pan. Cook over medium heat until boiling, stirring constantly. When mixture comes to a full boil, reduce heat and simmer until mixture comes to the softball stage. Remove from heat. Beat in cinnamon, allspice, margarine, and vanilla. Cool, then beat until thick and mixture loses its gloss. Spoon into buttered dish.

Ingredients
1 package Betty Crocker® Sunkist® lemon bar mix
1/3 C. chopped nuts
1 tsp. pumpkin pie spice
1 can (15 oz.) pumpkin (not pumpkin pie mix)
1 can (5 oz.) evaporated milk (1/3 C.)
3 eggs
1 C. frozen (thawed) whipped topping
Directions
Heat oven to 350 F. Mix Ready-Mixed Crust (dry) and nuts in ungreased springform pan, 9×3 inches, or ungreased square baking dish, 8×8x2 inches. Press crust evenly in bottom of pan. Bake 15 minutes. Beat Filling Mix, pumpkin pie spice, pumpkin, evaporated milk and eggs with wire whisk until smooth; pour over hot crust. Bake about 45 minutes or until knife inserted in center comes out clean. Cool 15 minutes. Refrigerate uncovered at least 1 hour until cool. Spread or serve with whipped topping. Cover and refrigerate until serving.

Ingredients
1 lb. firm French bread
2 C. Half & Half (half milk, half cream)
1 1/2 C. sugar
3 eggs
15 oz. pumpkin pie mix (seasoned)
1/2 C. raisins
1/2 C. pecans
Whipped cream
Directions
Lightly grease a medium casserole dish. Pre-heat the oven to 350 degrees. Tear the bread into medium pieces. Add to a mixing bowl. Sprinkle on the sugar. In a separate bowl, lightly beat the eggs. Add Half & Half and pumpkin mix. Toss the mixture with the bread. Place half in the casserole. Add the raisins and pecans. Top with the other half of the mixture. Bake for 25-35 minutes or until firm and lightly brown. Serve warm with whipped cream.

This is a very easy cake made with canned pumpkin and yellow cake mix. Serve with vanilla ice cream or whipped cream.

Ingredients
1 15-oz. can pumpkin puree
1 12-fl.-oz. can evaporated milk
3 eggs
1 C. white sugar
4 tsp. pumpkin pie spice
1 18.25-oz. pkg. yellow cake mix
3/4 C. butter, melted
1 1/2 C. chopped walnuts
Directions
Preheat oven to 350 degrees. Grease a 9×13-inch baking pan. In a large bowl, combine pumpkin, milk, eggs, sugar and spice. Mix well, and pour into a 9×13-inch pan. Sprinkle dry cake mix over the top, then drizzle with melted butter. Top with walnuts. Bake at 350 degrees for 1 hour or until a knife inserted near the center comes out clean.

Ingredients
3 eggs
1 1/2 tsp. cinnamon
1 tsp. baking soda
3/4 C. flour
2/3 C. pumpkin
1 C. sugar
1 tsp. salt
Filling:
1 8-oz. pkg. cream cheese, softened
2 Tbs. butter
1 tsp. vanilla
1 C. powdered sugar
1/2 C. nuts, chopped (optional)
Directions
Line the cookie sheet with wax paper and grease paper well. Mix pumpkin and rest of ingredients. Blend until smooth. Pour into cookie sheet. Bake in 350 degree-oven for 15 minutes. Remove and sprinkle with powdered sugar. Filp over onto the towel. Peel off waxed paper and roll like a jelly roll. Leave in towel until completely cooled. Meanwhile, combine and beat filling ingredients until smooth. Unroll and spread with filling. Roll back up and keep refrigerated.

3/4 C. (1 1/2 sticks) butter
1 -5 1/3 oz. can (2/3 C.) evaporated milk
1/2 C. solid pack pumpkin
1 tsp. pumpkin pie spice
1 -12 oz. package butterscotch morsels
1 7 oz. jar marshmallow creme
1 C. toasted pecans, chopped
1 tsp. vanilla extract
1. Butter a 13 x 9-inch pan.

1 box angel food cake mix
1 lg. can pumpkin pie mix
1 lg. container Cool Whip
Directions
Preheat oven to 350 degrees. Mix dry cake mix and pumpkin pie mix together. Bake until toothpick comes out clean (about 30-40 minutes). Cool completely. Frost with Cool Whip.

Ingredients
1 15 or 16 oz. can solid pumpkin
1 box of 1-step angel food cake mix
1 C. water
1/2 tsp. pumpkin pie spice
Directions
Mix together all ingredients and put in a sprayed 9×13” cake pan. Bake at 350 degrees for 35 minutes.
Yield: 12 servings.
