Roasted Pumpkin Seeds Recipe

Pumpkins have multiple uses: you can carve them, make a pie out of them, or even a fudge, but what do you do with those darn seeds? Well, if you try this recipe, you’ll find out that even the seeds are a delicious snack! No part of the pumpkin goes to waste!

Ingredients

2 C. pumpkin seeds
1/4 C. lemon juice (fresh squeezed)
3/4 Tbs. salt

Directions

Dilute the salt with the lemon juice; then, mix in the pumpkin seeds. Keep mixing together until all seeds are very wet and soaked. Place seeds in a glass bowl and put in the microwave on very high temperature for 4 minutes. Take out and stir them very well and place back in the microwave for another 2 minutes.

Pumpkin Seed Candy Recipe

These wrapped candies are perfect treats for celebrating Halloween. Pepitas, or pumpkin seeds, are available hulled or unhulled at health-food stores. Paper candy cups are available at baking supply stores.

Ingredients

1 C. hulled pepitas
1/4 C. sugar
2/3 C. good-quality honey
3 Tbs. cold unsalted butter, plus 2 Tbs. melted for brushing

Directions

Heat a large skillet over medium-high heat. Add pepitas; toast, stirring constantly until seeds pop and become slightly golden, about 3 minutes. Transfer to a bowl to cool. Place sugar and honey in a small saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar, about 3 minutes. Add pepitas, and continue cooking until temperature registers 285° on a candy thermometer, 3 to 4 minutes. Remove from heat, and stir in cold butter. Let the mixture cool to 240 F, about 4 minutes.

Ingredients

2 C. dried pumpkin seeds
1 pkg. Butter-flavored cooking spray
Salt (to taste)

Directions

Spread pumpkin seeds on shallow pan. Spray with cooking spray and sprinkle with salt; stir, spray, and sprinkle with salt again. Bake at 250 degrees for about 2 hours, stirring occasionally. The seeds are done when they are crisp and golden brown.

Easy Pumpkin Seeds Recipe

These are the best pumpkin seeds I have ever tasted and they were so easy to make!

Ingredients

1-2 Tbs. sea salt
enough water for soaking
2 C. pumpkin seeds
cooking spray

Directions

While carving your pumpkin, collect the seeds in a separate bowl or colander. Try to remove as much of the stringy pumpkin goop from them as possible.

Place seeds in strainer or colander and rinse of all excess pumpkin goop. Salt the bottom of a small bowl. Pour in some pumpkin seeds. Top with more salt. Continue to layer pumpkin seeds and salt. Fill bowl to top with water and let seeds soak overnight.
