Roasted Pumpkin Seeds Recipe

A yummy, healthy snack perfect for cool Fall days!

Ingredients

2 C. dried pumpkin seeds
1 pkg. Butter-flavored cooking spray
Salt (to taste)

Directions

Spread pumpkin seeds on shallow pan. Spray with cooking spray and sprinkle with salt; stir, spray, and sprinkle with salt again. Bake at 250 degrees for about 2 hours, stirring occasionally. The seeds are done when they are crisp and golden brown.

Easy Pumpkin Seeds Recipe

These are the best pumpkin seeds I have ever tasted and they were so easy to make!

Ingredients

1-2 Tbs. sea salt
enough water for soaking
2 C. pumpkin seeds
cooking spray

Directions

While carving your pumpkin, collect the seeds in a separate bowl or colander. Try to remove as much of the stringy pumpkin goop from them as possible.

Place seeds in strainer or colander and rinse of all excess pumpkin goop. Salt the bottom of a small bowl. Pour in some pumpkin seeds. Top with more salt. Continue to layer pumpkin seeds and salt. Fill bowl to top with water and let seeds soak overnight.

Pumpkin Seed Candy Recipe

These wrapped candies are perfect treats for celebrating Halloween. Pepitas, or pumpkin seeds, are available hulled or unhulled at health-food stores. Paper candy cups are available at baking supply stores.

1 C. hulled pepitas
1/4 C. sugar
2/3 C. good-quality honey
3 Tbs. cold unsalted butter, plus 2 Tbs. melted for brushing
